Sponge Cakes with Olive Oil (Magdalenas)
Ingredients
- 225 g plain flour
- 100 g caster sugar
- Grated zest of 1 lemon
- 200 ml olive oil
- 6 eggs, separated
- 2 tbsp milk
Instructions
- Preheat oven to 190°C / 375°F (Gas 5). Grease deep bun or muffin tins.
- Mix flour, sugar, and lemon zest. Beat in olive oil, egg yolks, and milk until smooth.
- Whisk egg whites to stiff peaks; fold gently into batter.
- Spoon into tins; bake 20 minutes until risen and golden. Cool on rack.
