Sponge Cakes with Olive Oil (Magdalenas)

Ingredients

  • 225 g plain flour
  • 100 g caster sugar
  • Grated zest of 1 lemon
  • 200 ml olive oil
  • 6 eggs, separated
  • 2 tbsp milk

Instructions

  1. Preheat oven to 190°C / 375°F (Gas 5). Grease deep bun or muffin tins.
  2. Mix flour, sugar, and lemon zest. Beat in olive oil, egg yolks, and milk until smooth.
  3. Whisk egg whites to stiff peaks; fold gently into batter.
  4. Spoon into tins; bake 20 minutes until risen and golden. Cool on rack.
