Beetroot Relish¶
A tangy, sweet beetroot relish perfect as an accompaniment to cold meats, cheese platters, or sandwiches.
Ingredients¶
- 300 ml red wine vinegar
- 300 g caster sugar
- 1 red chilli, deseeded
- 3 red onions, chopped
- 2 tsp salt
- 3 garlic cloves, crushed
- 30 g root ginger, grated
- 800 g beetroot, grated
Instructions¶
- Heat the vinegar and sugar in a large pan until the sugar is dissolved.
- Add the chilli, red onion, salt, garlic, ginger and beetroot and bring to the boil.
- Simmer for 40 minutes until thick and syrupy.
- Pour into sterilised jars and seal while hot.
Storage¶
Keeps for up to 6 months in a cool, dark place once sealed. Refrigerate after opening and use within 4 weeks.
