Beetroot Relish

A tangy, sweet beetroot relish perfect as an accompaniment to cold meats, cheese platters, or sandwiches.

Ingredients

  • 300 ml red wine vinegar
  • 300 g caster sugar
  • 1 red chilli, deseeded
  • 3 red onions, chopped
  • 2 tsp salt
  • 3 garlic cloves, crushed
  • 30 g root ginger, grated
  • 800 g beetroot, grated

Instructions

  1. Heat the vinegar and sugar in a large pan until the sugar is dissolved.
  2. Add the chilli, red onion, salt, garlic, ginger and beetroot and bring to the boil.
  3. Simmer for 40 minutes until thick and syrupy.
  4. Pour into sterilised jars and seal while hot.

Storage

Keeps for up to 6 months in a cool, dark place once sealed. Refrigerate after opening and use within 4 weeks.
