Indian Lime Pickle

Ingredients

  • 4 green limes
  • 2 tsp salt (divided)
  • 1 inch fresh ginger, sliced
  • 10 green finger chillies, sliced
  • 1 tbsp white vinegar
  • 2 tbsp sugar
  • 1 tbsp paprika
  • 1 tsp garam masala
  • 1 tsp cumin seeds
  • 2 garlic cloves, sliced
  • 2 tbsp oil

Instructions

  1. Quarter limes; place in sterilised jar with 1 tsp salt. Shake to coat; leave in sunny spot 3–4 days, shaking daily.
  2. Add remaining 1 tsp salt; leave 1 month in sun, rotating daily (or store in warm bright window) until softened.
  3. Heat oil; fry ginger until golden. Add vinegar, limes and their juice; cook 5 minutes.
  4. Add chillies, spices, garlic, sugar; cook 3 minutes.
  5. Spoon hot mixture into sterilised jars. Cool; refrigerate up to 1 month.
