Indian Lime Pickle
Ingredients
- 4 green limes
- 2 tsp salt (divided)
- 1 inch fresh ginger, sliced
- 10 green finger chillies, sliced
- 1 tbsp white vinegar
- 2 tbsp sugar
- 1 tbsp paprika
- 1 tsp garam masala
- 1 tsp cumin seeds
- 2 garlic cloves, sliced
- 2 tbsp oil
Instructions
- Quarter limes; place in sterilised jar with 1 tsp salt. Shake to coat; leave in sunny spot 3–4 days, shaking daily.
- Add remaining 1 tsp salt; leave 1 month in sun, rotating daily (or store in warm bright window) until softened.
- Heat oil; fry ginger until golden. Add vinegar, limes and their juice; cook 5 minutes.
- Add chillies, spices, garlic, sugar; cook 3 minutes.
- Spoon hot mixture into sterilised jars. Cool; refrigerate up to 1 month.
