Mixed Farm Pickle
Ingredients
- Assorted chopped vegetables: apples, onion, turnip, swede, carrot, beetroot
- Sultanas
- Vinegar
- Sugar
- Pickling spices
Instructions
- Combine chopped vegetables and sultanas with enough vinegar to cover in preserving pan.
- Add sugar (equal to ~60% of vegetable weight) and pickling spices tied in muslin.
- Simmer until vegetables tender and liquid thickened (stir to prevent sticking).
- Pot hot into sterilised jars; seal. Mature several weeks.
