Mixed Farm Pickle

Ingredients

  • Assorted chopped vegetables: apples, onion, turnip, swede, carrot, beetroot
  • Sultanas
  • Vinegar
  • Sugar
  • Pickling spices

Instructions

  1. Combine chopped vegetables and sultanas with enough vinegar to cover in preserving pan.
  2. Add sugar (equal to ~60% of vegetable weight) and pickling spices tied in muslin.
  3. Simmer until vegetables tender and liquid thickened (stir to prevent sticking).
  4. Pot hot into sterilised jars; seal. Mature several weeks.
