Tomato Relish¶
A spiced tomato relish with warm aromatic spices - perfect with cold meats, cheese, or burgers.
Ingredients¶
- 900 g ripe tomatoes
- 50 g onion
- 1 tsp allspice berries
- 8 whole celery leaves
- 100 ml red wine vinegar
- 1 tsp cayenne pepper
- 1 tsp mustard seeds
- 100 g soft brown sugar
- Salt to taste
Instructions¶
- Quarter tomatoes and place them in a heavy-bottomed pan.
- Dice onion and add to pan with allspice berries and celery leaves.
- Cover pan and cook over gentle heat for 45 minutes, stirring occasionally.
- Uncover pan, add vinegar, cayenne, mustard seeds, sugar and salt.
- Cook uncovered for a further 35 minutes until thickened, stirring regularly to prevent sticking.
- Pour into sterilised jars and seal while hot.
Storage¶
Keeps for up to 6 months in a cool, dark place once sealed. Refrigerate after opening and use within 4 weeks.
