Worcestershire Sauce (Homemade)

Ingredients

  • 2 tbsp olive oil
  • 2 large sweet onions, roughly chopped
  • ½ cup tamarind paste
  • 2 tbsp minced garlic
  • 2 tbsp minced ginger
  • 2 jalapeños, seeded and minced
  • 60 ml (¼ cup) chopped canned anchovies
  • 60 ml (¼ cup) tomato paste
  • 2 whole cloves
  • 2 tbsp freshly cracked black pepper
  • 120 ml (½ cup) dark corn syrup
  • 240 ml (1 cup) molasses
  • 720 ml (3 cups) white vinegar
  • 240 ml (1 cup) dark beer
  • 120 ml (½ cup) orange juice
  • 480 ml (2 cups) water
  • 1 lemon, thinly sliced
  • 1 lime, thinly sliced

Instructions

  1. Heat oil in large saucepan; sauté onions until soft (~7 minutes).
  2. Add tamarind, garlic, ginger, and jalapeños; cook 5 minutes.
  3. Add anchovies, tomato paste, cloves, pepper, corn syrup, molasses, vinegar, beer, orange juice, water, lemon, and lime; bring to boil.
  4. Reduce heat; simmer, stirring occasionally, about 3 hours until thick enough to coat spoon.
  5. Strain; bottle and refrigerate (makes ~1.4 L / 6 cups).
