Worcestershire Sauce (Homemade)
Ingredients
- 2 tbsp olive oil
- 2 large sweet onions, roughly chopped
- ½ cup tamarind paste
- 2 tbsp minced garlic
- 2 tbsp minced ginger
- 2 jalapeños, seeded and minced
- 60 ml (¼ cup) chopped canned anchovies
- 60 ml (¼ cup) tomato paste
- 2 whole cloves
- 2 tbsp freshly cracked black pepper
- 120 ml (½ cup) dark corn syrup
- 240 ml (1 cup) molasses
- 720 ml (3 cups) white vinegar
- 240 ml (1 cup) dark beer
- 120 ml (½ cup) orange juice
- 480 ml (2 cups) water
- 1 lemon, thinly sliced
- 1 lime, thinly sliced
Instructions
- Heat oil in large saucepan; sauté onions until soft (~7 minutes).
- Add tamarind, garlic, ginger, and jalapeños; cook 5 minutes.
- Add anchovies, tomato paste, cloves, pepper, corn syrup, molasses, vinegar, beer, orange juice, water, lemon, and lime; bring to boil.
- Reduce heat; simmer, stirring occasionally, about 3 hours until thick enough to coat spoon.
- Strain; bottle and refrigerate (makes ~1.4 L / 6 cups).
