Basic Vegan Nut Roast

Ingredients

  • 2 onions, sliced
  • 5 tomatoes, diced (skin on or off)
  • 2 carrots, grated
  • 1 cup wholemeal breadcrumbs (or 3 slices fresh bread, crumbed)
  • 1/2 cup vegetable stock (120 ml) (or juice)
  • 100 g cashews, ground
  • 100 g hazelnuts, ground
  • Salt and pepper, to taste
  • Oil (for frying)

Instructions

  1. Fry onions in a little oil over medium heat until translucent (≈5 minutes).
  2. Add carrot, tomatoes, breadcrumbs, and stock; cook gently 15–20 minutes until thick.
  3. Remove from heat; stir in ground nuts. Preheat oven to 200°C (392°F).
  4. Line or grease a loaf tin; pack mixture in evenly.
  5. Bake 25–30 minutes until set and lightly browned. Rest 5–10 minutes before slicing.
