Basic Vegan Nut Roast¶
Ingredients¶
- 2 onions, sliced
- 5 tomatoes, diced (skin on or off)
- 2 carrots, grated
- 1 cup wholemeal breadcrumbs (or 3 slices fresh bread, crumbed)
- 1/2 cup vegetable stock (120 ml) (or juice)
- 100 g cashews, ground
- 100 g hazelnuts, ground
- Salt and pepper, to taste
- Oil (for frying)
Instructions¶
- Fry onions in a little oil over medium heat until translucent (≈5 minutes).
- Add carrot, tomatoes, breadcrumbs, and stock; cook gently 15–20 minutes until thick.
- Remove from heat; stir in ground nuts. Preheat oven to 200°C (392°F).
- Line or grease a loaf tin; pack mixture in evenly.
- Bake 25–30 minutes until set and lightly browned. Rest 5–10 minutes before slicing.
