Calentita (Chickpea Flour Bake)¶
Ingredients¶
- 250 g chickpea (gram) flour
- 1 litre water
- 3 tbsp olive oil (plus extra for pan)
- 1 tsp salt (or to taste)
- Black pepper, to taste
Instructions¶
- Whisk chickpea flour, water, salt, and pepper until smooth. Rest (covered) at least 1 hour, preferably overnight (re-whisk before baking).
- Heat oven to 175°C / 350°F. Add a thin layer of olive oil to a 23×15 cm (9×6 in) tin; place in oven to heat. Swirl or brush hot oil up the sides.
- Pour batter into hot tin and bake ~55–65 minutes until set in center and lightly golden.
- Cool briefly, slice, and serve warm (pepper to finish).
