Chicken Enchilada

Ingredients

  • Cooking spray
  • 300 g skinless chicken breast, sliced
  • 1 small onion, sliced
  • 1 medium red pepper, sliced
  • 1 garlic clove, finely chopped
  • 1/2 tsp ground cumin
  • 1 medium can sweetcorn, drained
  • 1 small can kidney beans, drained and gently crushed
  • 300 g passata
  • 2 tbsp fresh coriander, chopped, plus extra to garnish
  • 4 medium wholemeal tortilla wraps
  • 100 ml reduced-fat soured cream
  • 25 g mozzarella, grated
