Chicken Enchilada
Ingredients
- Cooking spray
- 300 g skinless chicken breast, sliced
- 1 small onion, sliced
- 1 medium red pepper, sliced
- 1 garlic clove, finely chopped
- 1/2 tsp ground cumin
- 1 medium can sweetcorn, drained
- 1 small can kidney beans, drained and gently crushed
- 300 g passata
- 2 tbsp fresh coriander, chopped, plus extra to garnish
- 4 medium wholemeal tortilla wraps
- 100 ml reduced-fat soured cream
- 25 g mozzarella, grated
