Chilli Con Carne

Ingredients

  • Cooking spray
  • 450 g extra-lean beef mince (5% fat)
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 medium red pepper, deseeded and roughly chopped
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 400 g tinned tomatoes
  • 1 large can kidney beans, drained
  • 1 vegetable stock cube, made up to 250 ml with hot water
  • 240 g brown rice
  • 80 g fat-free natural yogurt (to serve)

Instructions

  1. Heat a large pan over a medium heat. When hot, spray with cooking spray, add the mince, increase the heat and cook 4-5 minutes, stirring, until lightly browned.
  2. Stir in the onion, garlic and pepper and cook 4-5 minutes until the onion starts to soften.
  3. Add the chilli powder and cumin and cook 1 minute.
  4. Add the tomatoes, kidney beans and stock and season. Bring to a simmer, cover and cook 25-30 minutes, stirring occasionally.
  5. Cook the rice according to packet instructions.
  6. Serve the chilli with rice and a spoonful of yogurt.
