Creamy Mushroom & Spinach Pasta

Ingredients

  • Cooking spray
  • 1 medium onion, finely sliced
  • 2 garlic cloves, crushed
  • 400 g mushrooms, roughly chopped
  • 100 g Philadelphia Light soft cheese
  • 1/2 vegetable stock cube, made up to 150 ml
  • 150 g spinach
  • 250 g wholewheat pasta

Instructions

  1. Lightly mist a deep frying pan with cooking spray and cook the onion over a medium heat for 4-5 minutes until softened. Add the garlic, season well with salt and black pepper, then cook 1 minute.
  2. Add the mushrooms with a splash of water and turn the heat up slightly. Cook 4-5 minutes, stirring often, until golden.
  3. Reduce the heat, add the soft cheese and stir until it melts. Pour in the stock, season with black pepper and cook 8-10 minutes until slightly thickened.
  4. Cook the pasta according to pack instructions. Drain well and stir through the spinach to wilt.
  5. Toss the sauce with the pasta and serve.
