Onion Bhaji
Ingredients
- 100 g gram (chickpea) flour
- ¼ tsp chilli powder
- ½ tsp ground turmeric
- ½ tsp baking powder
- ½ tsp ground cumin
- 1 large onion, halved and thinly sliced
- 1 green chilli, deseeded and finely chopped
- 25 g fresh coriander, finely chopped
- ½ tsp salt
- Cold water (to make thick batter)
- Vegetable oil (for deep frying)
Instructions
- In a bowl whisk gram flour, chilli powder, turmeric, baking powder, cumin, and salt.
- Add sliced onion, chilli, and coriander; toss to coat evenly.
- Gradually add cold water, stirring, until a thick clinging batter forms (not runny).
- Heat oil to 180°C / 350°F. Drop heaped tablespoons of mixture into oil; fry 3–4 minutes, turning, until deep golden.
- Drain on kitchen paper and serve hot with chutney. Makes 10–12 bhajis.
