Onion Bhaji

Ingredients

  • 100 g gram (chickpea) flour
  • ¼ tsp chilli powder
  • ½ tsp ground turmeric
  • ½ tsp baking powder
  • ½ tsp ground cumin
  • 1 large onion, halved and thinly sliced
  • 1 green chilli, deseeded and finely chopped
  • 25 g fresh coriander, finely chopped
  • ½ tsp salt
  • Cold water (to make thick batter)
  • Vegetable oil (for deep frying)

Instructions

  1. In a bowl whisk gram flour, chilli powder, turmeric, baking powder, cumin, and salt.
  2. Add sliced onion, chilli, and coriander; toss to coat evenly.
  3. Gradually add cold water, stirring, until a thick clinging batter forms (not runny).
  4. Heat oil to 180°C / 350°F. Drop heaped tablespoons of mixture into oil; fry 3–4 minutes, turning, until deep golden.
  5. Drain on kitchen paper and serve hot with chutney. Makes 10–12 bhajis.
