Papas a lo Pobre (Slow-Cooked Potatoes)
Ingredients
- 2–3 onions, roughly chopped
- 1 head garlic, cloves separated (unpeeled)
- 2–6 potatoes, irregular chunks
- 2 sweet peppers, sliced
- 1–2 fresh or dried chillies
- 480 ml (2 cups) olive oil (approx; enough to shallow-fry)
- Salt
Instructions
- Heat olive oil in large frying pan over low heat. Add onions and whole garlic cloves; cook gently.
- Add potatoes; cook slowly, stirring occasionally.
- Add peppers and chillies; continue slow cooking until potatoes very tender and mixture soft and cohesive (can take 1–2 hours). Season with salt.
- Serve warm with crusty bread.
