Papas a lo Pobre (Slow-Cooked Potatoes)

Ingredients

  • 2–3 onions, roughly chopped
  • 1 head garlic, cloves separated (unpeeled)
  • 2–6 potatoes, irregular chunks
  • 2 sweet peppers, sliced
  • 1–2 fresh or dried chillies
  • 480 ml (2 cups) olive oil (approx; enough to shallow-fry)
  • Salt

Instructions

  1. Heat olive oil in large frying pan over low heat. Add onions and whole garlic cloves; cook gently.
  2. Add potatoes; cook slowly, stirring occasionally.
  3. Add peppers and chillies; continue slow cooking until potatoes very tender and mixture soft and cohesive (can take 1–2 hours). Season with salt.
  4. Serve warm with crusty bread.
