Patatas a lo Pobre (Andalusian Potatoes)

Ingredients

  • 4 large potatoes, thinly sliced (soaked 20 min, drained)
  • 1 green pepper, chopped or in thick strips
  • 1 onion, roughly chopped
  • 120 ml (½ cup) olive oil (approx)
  • Salt

Instructions

  1. Heat oil in deep frying pan over medium-high; add potatoes and salt; fry 5 minutes turning.
  2. Reduce heat low; cover 10 minutes.
  3. Add pepper and onion; stir; cover and fry gently another 10 minutes, checking occasionally.
  4. Continue until potatoes tender with some crisp edges (add few minutes if needed). Adjust salt; drain excess oil if desired. Serve hot.
