Rolitos (Stuffed Veal Rolls)

Ingredients

  • 8 slices thin veal
  • 4 slices ham, halved
  • 2 hard-boiled eggs, quartered
  • 8 stuffed olives (with peppers), halved
  • Salt and pepper
  • 1 garlic clove, crushed
  • 1 onion, chopped
  • 240 ml (1 cup) beef stock
  • 2 tsp gravy powder (Bisto) or cornstarch to thicken

Instructions

  1. Lay veal slice; place ham half, egg quarter, and two olive halves; roll and secure with toothpicks. Repeat.
  2. Sauté garlic and onion until soft; add stock and thickener; bring to simmer.
  3. Add veal rolls; simmer gently until cooked through and flavours meld (~25–30 minutes). Adjust seasoning.
  4. Serve with mashed potatoes and sauce.
