Rosto (Pork Pasta Stew)

Ingredients

  • 1 kg pork loin
  • 2 carrots, chopped
  • 4 potatoes, quartered
  • 1 onion, chopped
  • 500 g penne or macaroni
  • 250 g mushrooms
  • 500 g fresh tomatoes, chopped
  • 400 g tomato passata or crushed tomatoes
  • 1 garlic clove, crushed
  • Splash white wine
  • Sugar (pinch, to balance)
  • Salt and pepper
  • Olive oil
  • Grated cheese (Parmesan or aged Edam) to serve

Instructions

  1. Fry garlic and onion in olive oil until soft.
  2. Add fresh tomatoes; cook 5 minutes; add pork loin and brown.
  3. Add passata, wine, potatoes, and carrots; simmer until meat and vegetables tender.
  4. Add mushrooms last 10 minutes. Season with salt, pepper, and a pinch sugar.
  5. Cook pasta separately until al dente; slice meat; serve meat, vegetables, and sauce over pasta with cheese.
