Rosto (Pork Pasta Stew)
Ingredients
- 1 kg pork loin
- 2 carrots, chopped
- 4 potatoes, quartered
- 1 onion, chopped
- 500 g penne or macaroni
- 250 g mushrooms
- 500 g fresh tomatoes, chopped
- 400 g tomato passata or crushed tomatoes
- 1 garlic clove, crushed
- Splash white wine
- Sugar (pinch, to balance)
- Salt and pepper
- Olive oil
- Grated cheese (Parmesan or aged Edam) to serve
Instructions
- Fry garlic and onion in olive oil until soft.
- Add fresh tomatoes; cook 5 minutes; add pork loin and brown.
- Add passata, wine, potatoes, and carrots; simmer until meat and vegetables tender.
- Add mushrooms last 10 minutes. Season with salt, pepper, and a pinch sugar.
- Cook pasta separately until al dente; slice meat; serve meat, vegetables, and sauce over pasta with cheese.
