Unicorn Baked Beans

Ingredients

  • 450 g dried haricot beans (soaked overnight) OR 4 × 425 g cans haricot beans (no sugar/salt)
  • 3 medium onions, finely chopped
  • 4 garlic cloves, crushed
  • 3 tbsp extra-virgin olive oil
  • 2 tsp paprika
  • 600 ml water
  • 2 tbsp molasses
  • 2 heaped tbsp tomato ketchup (optional)
  • 3 tbsp tomato purée

Instructions

  1. If using dried beans: cook in fresh water 60 minutes until tender; drain.
  2. Sauté onions and garlic in olive oil until lightly browned. Add paprika and splash water to form rich sauce.
  3. Add molasses, ketchup (if using), and tomato purée; add remaining water gradually to make thick sauce.
  4. Stir in beans; bake covered at 150°C / 300°F for 2 hours (check after 1 hour; add water if needed) until thick and rich.
