Unicorn Baked Beans
Ingredients
- 450 g dried haricot beans (soaked overnight) OR 4 × 425 g cans haricot beans (no sugar/salt)
- 3 medium onions, finely chopped
- 4 garlic cloves, crushed
- 3 tbsp extra-virgin olive oil
- 2 tsp paprika
- 600 ml water
- 2 tbsp molasses
- 2 heaped tbsp tomato ketchup (optional)
- 3 tbsp tomato purée
Instructions
- If using dried beans: cook in fresh water 60 minutes until tender; drain.
- Sauté onions and garlic in olive oil until lightly browned. Add paprika and splash water to form rich sauce.
- Add molasses, ketchup (if using), and tomato purée; add remaining water gradually to make thick sauce.
- Stir in beans; bake covered at 150°C / 300°F for 2 hours (check after 1 hour; add water if needed) until thick and rich.
