All-Citra Pale Ale (Extract)

A single-hop extract pale ale showcasing Citra. Figures are for a 4.5 gallon (17 L) batch.

Ingredients

  • 4 lb (1.8 kg) pale liquid malt extract
  • 3.3 lb (1.5 kg) Munich liquid malt extract
  • 0.5 oz (14 g) Citra hops, at 45 minutes
  • 0.5 oz (14 g) Citra hops, at 30 minutes
  • 0.5 oz (14 g) Citra hops, at 5 minutes
  • 1.5 oz (43 g) Citra hops, dry hop
  • Pale ale yeast
  • Brewing water to 4.5 gallons (17 L)

Instructions

  1. Bring your brewing water to the boil and dissolve the pale malt extract, stirring well to avoid scorching on the base of the kettle.
  2. Start the 45 minute boil and add 0.5 oz (14 g) Citra.
  3. At 30 minutes remaining, stir in the Munich malt extract and add a second 0.5 oz (14 g) Citra.
  4. At 5 minutes remaining, add the final 0.5 oz (14 g) Citra.
  5. Cool the wort quickly, top up to 4.5 gallons (17 L), and pitch the yeast once the wort is at fermentation temperature.
  6. Ferment to a final gravity of around 1.014.
  7. Add the 1.5 oz (43 g) dry hop charge after primary fermentation has finished and leave for several days before packaging.
